As part of the new program I started yesterday, i am paying close attention to not only what i'm eating but also when i eat it.
The goal of this nutrition plan is to maximize my body's uptake and absorption of the nutrients, fueling my body for best performance and optimizing the results I will get through my workouts. The really amazing thing about this new program is that I am eating SO MUCH FOOD. I'm constantly eating all day long, which seems counter productive, especially for weight loss, but it is really important that you fuel your body with good nutrition. What we eat truly matters. (Wow, my alarm just went off to remind me to eat--again!)
This recipe is one that I made in bulk last Sunday during my meal prep and I think it tastes better the longer it sits in the fridge because the flavors really start to meld together. This is one of many recipes available in my virtual wellness group.
Quinoa Tabouli Bowl
Serves 1 Prep Time: 10 min Cooking Time: None
1/2 cup cooked quinoa
1/3 cup chopped onion
1/3 cup chopped tomato
1/3 cup chopped cucumber
3/4 cup chopped cooked chicken breast
1 dash sea salt
1 tsp extra-virgin olive oil
1 Tbsp lemon juice
1 Tbsp. chopped fresh mint (I couldn't find this and it still tastes great without it!)
1 Tbsp. chopped fresh parsley
1. Combine quinoa, onion, tomato, cucumber, chicken, salt, oil, lemon juice, mint, and parsley in a large bowl; toss gently to blend.
Container counts: 1 yellow, 1 red, 1 green, 1 teaspoon
*I added some roasted pumpkin seeds for a crunch, which added an orange as well.
