It's a snow day here in Colorado, which means soup is most definitely on the menu! My family loves this soup and we have it 2-3 times per month. As my daughter has gotten older, I've experimented with adding more ingredients, which means it just keeps getting better and better. I hope you enjoy it as much as we do!
I normally make this recipe using the saute and soup setting on my Instant Pot but you can certainly make it on the stove as well.
Megan's Vegan Taco Soup
2 cans organic diced tomatoes
1 can green chilies
1T minced garlic
3 bell peppers
1 can black beans, rinsed
2 cans chili beans
32 oz low sodium vegetable broth
Dice and saute the onion until transparent. Add the garlic and cook until fragrant. Add the rest of the ingredients to your Instant Pot and bring to pressure using the soup setting.
Once the soup is done cooking, manually release the pressure and give it a good stir. Serve with or without tortilla chips and avocado. Add some cheese for the non-vegans or top with vegan cheese! My favorite is made by Vio Life. If you really want to take it next level, add some of Trader Joe's Chili Lime seasoning! SO DELICIOUS.
