One of the (many) things I’m sharing with my online accountability group this month is overnight oats recipes. Overnight oats are all the rage recently, and for good reason! We know that what you eat (or don’t eat) right away in the morning does make a difference in your day, and your overall health. And oatmeal is one of those foods that is a no-brainer way to start your day. 🥣
Oats are an amazing source of fiber, which helps to lower cholesterol and stabilize blood sugar levels, and keep things moving, if ya know what I mean. 💩😉 Oatmeal is also very well balanced. Besides the fiber, it has protein, vitamin and minerals and is gluten free which means it works for anyone with gluten intolerance or sensitivities. And it leaves you feeling nice and full, with a great dose of energy to start your day.
But perhaps the best thing about oatmeal is how versatile it is. You can add so many different flavors and toppings, increasing the flavor profile as well as the nutritional value. AND it’s super fast and easy, especially if you prep it ahead of time. Enter...overnight oats! So stinking; simple…just layer all the ingredients in a jar or other airtight container and store in the fridge overnight, and enjoy right away when you wake up! Here’s one to get you started...
¼ cup dry rolled oats
1 Tbsp chia seeds
½ cup unsweetened almond milk
½ cup unsweetened Greek Yogurt (I use soy or almond)
1½ tsp peanut (or other nut) butter
½ banana, sliced
1 Tbsp. mini (or regular) dark chocolate chips
Layer the ingredients in a jar or container - in the order listed!
Cover with a lid and refrigerate overnight.
**Adjust amounts of milk and yogurt to your preference for a thicker and creamier vs more liquid-texture oats.
