Confession: I don't LOVE vegetables. But I eat the you-know-what out of the vegetables I do love. Eating a #veggiesmost diet has so many incredible benefits for our health, including lower inflammation, aiding in weight loss, increasing fiber and digestive regularity and decreasing our risk of cancer.
I was 34 when I discovered that I actually liked Brussels Sprouts. They just weren't a food we had when I was growing up and the only ones I had ever tried tasted like stinky feet. Steamed brussels sprouts? To quote Hermione Granger, "Excuse me while I go and vomit...." Then I had them served crispy and glazed as an appetizer and it was true love from first bite. Now I buy them in bulk at Costco and they're a regular staple in our house.
This recipe is best made in an air fryer but if you don't have one of those, you can just roast them in the oven a little longer.
Megan's Kick Ass Sprouts
Cut off the stems of your sprouts and peel off any outer leaves that are wilted. Cut sprouts in half and spread on a baking sheet or in your air fryer. Drizzle with Extra Virgin Olive Oil, real maple syrup (you could also substitute honey. Ooooh...spicy honey would be good, too!) and balsamic vinegar. Sorry, kids...no exact measurements on this recipe. Seriously, just drizzle and make sure they're coated well. I top everything off with Pink Himalayan Sea Salt and bake/air fry until they're browned and crispy. If you don't like your sprouts well done, cook for less time. Enjoy!!!
